THOSE SWEET SUMMER MEMORIES

Hill Country was born from our founder’s fond memories of summers spent in Central Texas. Running around Lockhart with cousins, trying on new boots from his grandparents’ shop, and—of course—digging into plenty of incredible barbecue.

There’s something special about sharing one of those long barbecue market tables with the whole family. Something even more special about passing around the platters and fighting over the last spare rib. It’s those special food memories—the ones that you can see and smell and taste.

That’s what Hill Country is—not just the place you go for great brisket and an excellent cocktail, but the place you go to make memories. Maybe it’s your Monday night tradition, or your Longhorns game day ritual, or where you saw your favorite band live for the first time. Times spent with friends and family, elbows deep in barbecue and surrounded by that sweet Post Oak smoke.

LET’S MAKE MEMORIES

CERTIFIED ANGUS BRISKET
Less than 8% of all beef meets the strict quality standards for marbling, maturity, and tenderness to earn the label Certified Angus Beef—and we only use CAB to make our signature brisket. It’s not for a fancy label—it’s for the flavor.

Smoked low and slow over Texas Post Oak, that perfectly marbled piece of beef transforms into the most succulent and falling-apart-tender brisket. It’s an experience only made better coupled with a slice of butter bread, white onions and housemade pickles—and maybe an Old Fashioned or two.
