This is what Hill Country is famous for! The Moist Brisket has a great deal of marbling and a layer of fat around the outer edge that gives it that delicious texture and flavor. The Lean Brisket has little marbling and great smoky flavor.

We proudly serve all-natural, hormone-free chicken. Our Market Chicken is rubbed with our special Hill Country Chicken Rub, a secret blend of herbs and spices. It's mopped with our "If You Gotta Have It" barbecue sauce during the smoking process to add that extra layer of flavor and give it that distinctive color and shine.
